Preparation
Pre-heat the oven to 180 degrees Celsius and oil a round refractory to bake cakes with vegetable spray.
A bain marie melts the chocolate bars moving constantly.
In a deep bowl beat the yolks and sugar with an electric mixer for 4 minutes. Add vanilla and rum and beat for 1 additional minute.
Whisk slowly add the melted chocolate and butter and beat until you get a uniform dough.
Add flour, cocoa, coffee diluted in little hot water and salt to the mixture, mix with a wooden spoon.
In another deep bowl whisk egg whites until stiff. Add them to the chocolate mixture little by little and finish mixing the dough well.
Pour the mixture into the refractory and bake the cake for approximately 1 hour and 20 minutes.
Remove from the oven and let cool. Before serving decorate with icing sugar.
