Preparation
To make the cookies: In a food processor add the flour, sugar, cocoa powder, salt and baking powder until they mix well.
Add the margarine, milk, vanilla and half a teaspoon of the mint extract. Mix well.
In a bowl, pour the dough and knead with your hands until all the flour is well incorporated. Let the dough cool in the refrigerator for 1 hour.
Preheat the oven to 176 ° C (350 ° C)
In trays with waxed or non-stick paper, remove the dough from the refrigerator and roll some dough with a spoon and leave them on the trays.
Do not leave the dough balls together so they do not stick and crush with your fingers. Bake 12 to 14 minutes. Let the cookies cool completely.
For the coating: Melt the chocolate along with the margarine in a bain-marie. Add the half teaspoon of mint extract and stir until smooth.
Coat the cookies with the chocolate, taking care to remove the excess chocolate. Place the cookies on a tray and refrigerate.
Remove the cookies until the chocolate is firm.
