Ingredients

12 portions
  • 1 cup flour
  • 1/3 cups cocoa
  • 1/2 teaspoons baking soda
  • 1/8 teaspoons salt
  • 90 grams unsalted butter, at room temperature
  • 1/2 cups sugar
  • 1/2 cups brown sugar
  • 2 eggs
  • 1 tablespoon vanilla essence
  • 2/3 cups whole milk, to make the buttermilk
  • 1 tablespoon lemon juice, to make the buttermilk
  • 1 1/4 cups sugar, for the meringue
  • 3 egg whites
  • 1/4 tablespoons cream of tartar
  • 1 tablespoon vanilla essence, for the meringue
  • 12 cherries, to decorate
  • chocolates, grated, to decorate

Preparation

Preheat the oven to 180 degrees. Put cupcakes of paper in a tray of 12.
Warm the milk a little to make it warm, add the lemon juice and stir. Let it sit for 15-20 minutes or until you see it already thick.
In a bowl, mix flour, cocoa, baking soda and salt.
In another bowl, beat the butter, sugar and brown sugar for about 5 minutes until it is fluffy.
Add the eggs one at a time, and beat well. Add the vanilla.
Add flour ingredients, alternating with milk with lemon; starting and ending with flour. Move everything with a spatula making enveloping movements (if you beat more, the cupcakes will be hard).
With a spoon, fill each cupcake mold 3/4 full.
Bake for 20-25 minutes or until a toothpick comes out clean. Let cool in a rack.
Prepare the meringue: put the sugar, egg whites, cream of tartar and 1/3 cup of water in a pot and place over a bain-marie, over another pot with boiling water. With an electric hand mixer , beat until it sponges, about 1 minute.
Beat the whites another 7 minutes over the boiling water (you should not be touching it) for 7 minutes, until peaks form.
Add the vanilla to the meringue and stir to make the bitumen harden a bit, about 2 minutes.
With a spoon, or dulla, put meringue bitumen on top of each spiral shaped cupcake.
Decorate the cupcakes with a cherry and a little grated chocolate.

TIPS

They have to be served that same day so that the bitumen does not get ugly.
