Preparation
It is advisable to make the mouse one day before serving so that it hardens.
In a deep bowl beat the egg whites to the point of nougat
Add the sugar and beat until they form peaks.
The yolks are incorporated into the meringue and continue to beat slowly.
Melt the chocolate in a bain-marie and add the coffee.
Mix the chocolate with the eggs in an enveloping way and put the mouse in a nice glass mold and refrigerate for at least 3 hours.
