This rich pudding is delicious thanks to chocolate and coffee but also is nutritious because it is made with soy milk. A very rich and light dessert.

Preparation
Mix the first 5 ingredients in a medium saucepan over medium heat. Mix well with a balloon whisk while heating.
Add the milk and allow the mixture to boil. Lower to a low heat and cook for 1 minute or until it starts to thicken.
Remove the pudding from the heat and add the chocolate, mix until it has melted. Add the vanilla and mix well.
Pour the pudding in 4 individual cups or molds for flan, cover and refrigerate for at least 4 hours before serving.
