Preparation
Heat the whipping cream in the microwave for 30 seconds, separate ¼ of the cream and add the white chocolate, mix until integrated. Refrigerate and reserve.
Add the bitter chocolate to the remaining 3/4 cream and mix until integrated. Refrigerate and reserve.
Cut the chocolate Swiss rolls into 1 cm (.39 inch) thick slices. Set aside.
Beat the white chocolate cream until it doubles its volume.
Beat the bitter chocolate cream until it doubles its volume.
Place plastic wrap on a bowl and arrange the chocolate swiss rolls slices all over the surface until completely covered. Add a thin layer of white chocolate mousse and then fill with the bitter chocolate. Smooth well well and refrigerate 2 hours or until set.
Meanwhile, add the cocoa to half the whipped cream and mix. Pour the two creams into a pastry bag with a curl tip and reserve.
Invert the cake and decorate with two-color whipped cream. Serve very cold.
