Ingredients

6 portions
  • 200 grams bitter chocolate
  • 100 grams unsalted butter
  • 260 grams egg yolk
  • 50 grams sugar
  • 60 grams egg white
  • 40 grams sugar
  • 1 package raspberry
  • 6 balls ice cream
  • butter, amount needed to oil the mold
  • flour, amount needed to flour the mold
  • peppermint, to taste

Preparation

Melt the chocolate with butter in a bain-marie
In a bowl mix the yolks with the sugar
Mix the melted chocolate with the yolks and set aside.
Assemble the egg whites with the 40 gr of sugar. Already assembled mix in an enveloping way with chocolate
Enquillaquillar and flour the molds
Empty the mixture in the molds
Preheat the oven to 200 C
Put the molds in the oven for 9 minutes at 180C
Serve hot

PRESENTATION

Serve with a scoop of vanilla ice cream, garnish with a mint leaf and raspberries

TIPS

If you want more lava in your volcano, leave them less time in the oven
