Preparation
Preheat the oven to 200 ° C.
In a saucepan over low heat, add the whipping cream, the corn starch, the cocoa, the bitter chocolate and cook for 3 min until it dissolves completely.
Add the yolks little by little, cook for 3 more minutes until thick. Chill and reserve.
In a blender , beat the whites until they sponge, add the sugar little by little, and let it double in size.
Mix the egg whites over the yolks and gently until completely incorporated.
Grease the molds with butter and pour the previous mixture until reaching the edge.
Bake 10 minutes, serve immediately.
