Preparation
Drain the cherries, reserving 1/4 cup of the syrup in which they come.
Dry them with a napkin, so the mixture can stick better.
In a bowl mix the icing sugar, the butter and the syrup of the cherries. Integra perfectly, if the mixture is very watery you can add one more cup of sugar. Refrigerate for 20 minutes.
Take a small portion of the "dough", form balls and squash them lightly. Cover a cherry with the mixture, close it carefully. Repeat the process with the rest.
Once all the cherries are covered, refrigerate again for 15 minutes.
Melt the chocolate chips or sparks in the microwave, 20 to 20 seconds, moving between each time with a miserable shovel.
Take the cherries by the stem, immerse them in the chocolate, if necessary help yourself with a spoon so that they are well covered.
Place them in a tray with waxed paper.
Grate the candy canes or crush them inside a bag with the help of a rolling pin. Sprinkle the caramel on each truffle.
Refrigerate again until the chocolate has hardened.
