Ingredients

4 portions
  • 2 cups strawberry, cut into cubes, for strawberry compote
  • 1/4 cups Splenda® Mascabado, for strawberry compote
  • 1 yellow lemon, juice and zest, for the compote
  • 1 cup strawberry compote, cold
  • 1 cup whipping cream, cold
  • 1 cup cream, cold
  • enough bitter chocolate, cut into squares, to decorate
  • enough raspberry, frozen, to decorate
  • enough strawberry, in halves and quarters, to decorate

Preparation

In a saucepan over medium heat cook the strawberries with Splenda® Muscovado sugar and the yellow lemon juice while stirring until you obtain a consistency of jam. Add the lemon zest and mix, remove from heat and cool.
Beat the whipping cream until it doubles its volume, add the strawberry compote and continue beating until incorporated.
Pour over an oven proof dish and freeze for 1 day or until very solid.
Serve in a bowl and decorate with dark chocolate, frozen raspberries and strawberries.

TIPS
