Ingredients

6 servings
  • 1 Cup of evaporated milk for the key lime cake
  • 1/2 Cup of lemon juice
  • 2 pieces of light cream cheese for the key lime cake, 190g
  • 1 package of Maria cookie for the key lime cake, 170g
  • 2 cups of whipping cream
  • 1/4 of Cup of lemon zest green
  • 3 spoonfuls of yellow lemon zest
  • enough of Maria cookie ground, to decorate
  • enough of green lemon sliced, to decorate

    Preparation

    For the Mexican Key Lime cake, blend the evaporated milk with the lime juice, the cream cheese and sweeten it with Splenda® Sugar.
    In a oven proof dish place a layer of cookies, spread a little of the previous preparation and cover with more cookies. Repeat until the oven proof dish is completed and refrigerate until it is set.
    Once the key lime cake is solid, remove it from the refrigerator and cut into cubes. Set aside.
    For the ice cream, beat the whipping cream until it doubles its volume and forms peaks, add the zest of the limes and sweeten with Splenda® Sugar.
    Mix the previous preparation carefully with the key lime cake cubes and place the mixture in a container. Freeze until it is completely solid. Remove and serve the ice cream with ground cookies and lime slices.

    PRESENTATION

    Serve with ground cookies and lime slices.
