Because I love ice cream and more if it is pistachio, so here I leave the recipe I do, both cold and hot and so it refreshes a lot and it is also something very pleasant to prepare your own ice cream.

Ingredients

10 portions
  • 120 grams pistachio, peeled
  • 30 grams almond, peeled
  • 200 grams sugar
  • 6 egg yolks
  • 750 milliliters milk

Preparation

Put the pistachios and almonds, peeled, along with half the sugar in a grinder or robot (you can also crush it in the blender), and crush everything quickly so that the almonds do not release oil.
Next, pour the milk in a saucepan. Add the previous preparation and put on the fire. When the mixture breaks to boil, remove it from the heat, cover the pan and let it cool for about 30 minutes.
Meanwhile, whisk the yolks with the remaining sugar in a large bowl, until they are creamy.
Next, strain the milk with pistachios, over the beaten yolks and pour into a bowl. Put it on the fire and let simmer, stirring constantly, until the mixture is creamy. Remove from heat, and continue beating, to lower the temperature.
Once the milkshake is cold, pour it in the blender and at half time and slowly, then cool, and then remove it and beat it again in the blender slowly (I mean, press the beat button several times and slowly, do not let it grind blow) and so re-insert every 1/2 hour, do the same procedure for 1 1/2 hours.
Serve and good profit.

PRESENTATION

Serve in glasses, decorating them, if desired with some pistachios.
