Ingredients

4 servings
  • 16 ounces of Yoghurt Greek Style FAGE® Total 0%
  • 1 tablespoon of vanilla extract
  • 1/4 of Cup of raw sugar
  • 1/2 piece of pineapple cut into squares
  • 3/4 of Cup of blueberry
  • 8 spoonfuls of sugar

    Preparation

    In a medium bowl, mix the Greek Style Yoghurt FAGE® Total 0% and vanilla until smooth. Cover and refrigerate for at least 30 minutes.
    In a medium skillet over medium-high heat put brown sugar and a tablespoon of water and cook until melted, about 5 minutes. Add the pineapple and cook until caramelized and soft, another 5 minutes. Remove from heat, let cool a little at room temperature.
    Divide the pineapple and blueberries into four 6 and 8 ounce molds. Fill the molds to the top with the reserved yoghurt. Cover and put in the freezer for 5 minutes.
    Sprinkle two teaspoons of sugar over each casserole. Caramelize the sugar with a blowtorch, slowly sweeping the flame from one side to the other. Allow the sugar to harden (2 minutes), before serving.

    TIPS

    This method to caramelize the top part will not work under the grill, since the yoghurt will melt. A small blowtorch (found in specialty kitchen stores) works perfectly.
