Ingredients

8 portions
  • 3 eggs
  • 180 grams unsalted butter
  • 180 grams flour
  • 1 1/2 tablespoons royal baking powder
  • 1 1/2 tablespoons vanilla extract
  • 6 tablespoons Baileys
  • 180 grams sugar
  • 150 grams butter, at room temperature (buttercream)
  • 200 grams powdered sugar, (buttercream)
  • instant coffees, dissolved (buttercream)
  • chocolate sprinkles, and colored sugar, to decorate

Preparation

Preheat the oven to 170 ° C.
Beat the butter with the sugar until acremar. Add the eggs one at a time.
Mix the flour with the royal, sift it and add it to the egg mixture.
When everything is integrated, add the vanilla and Baileys. Beat for a few more minutes until you get a smooth dough.
Fill the saucers to 3/4 of their capacity and put in the oven for about 20 minutes. When they are ready, remove from the oven and let cool in the tray.
For the buttercream, beat the butter with half the sugar, while stirring add the coffee, gradually add the remaining icing sugar until you obtain a spreadable paste.
When the cupcakes are cold, and if you want a more intense flavor sprinkle a little Baileys cupcakes.
Put the buttercream in a sleeve, and with a star tip, decorate it and finish decorating with chocolate.

TIPS

It is very important to let the eggs be incorporated one by one and let them mix well before throwing the next to avoid lowering the mixture.
