These carrot cupcakes look very rich and they are fun. They are also practical and serve for any occasion depending on how you decorate them.

Ingredients

24 portions
  • 4 eggs
  • 1 1/2 cups sugar
  • 1 teaspoon vanilla extract
  • 3/4 cups vegetal oil
  • 1 pinch salt
  • 125 grams flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon powder
  • 2 cups carrot, grated
  • 1/2 cups walnut, chopped
  • 3/4 sticks cream cheese
  • 1/2 sticks butter
  • 3/4 cups powdered sugar
  • vegetal color additives, (various)

Preparation

Preheat oven to 180 degrees.
Beat the eggs until they are sparkling.
Add alternating sugar, flour and oil while continuing to beat.
At the end add the carrot and walnut and mix.
The molds for the cupcakes are filled to 2/3.
Bake about 20 minutes or until a toothpick is inserted and comes out almost clean.
For the bitumen: The cream cheese and the butter are stirred, the glass sugar is added if you do not want so sugary you can add less than one cup.
Use vegetable paint to taste. For a more elegant moment you can leave white bitumen, but you can paint colors.
The bitumen is added when the cupcakes are cold.

PRESENTATION

Depending on the event, use different wrappings for your cupcakes. Make them look fun if they are for a party or formal for a dinner.

TIPS

Take the cupcakes when you insert the toothpick and it comes out almost clean, since the cupcakes will finish cooking when you remove them.
