Cupcakes of Rum and Raisins

This recipe is very rich and easy to make with ingredients that we have in the pantry.

Ingredients

12 servings
  • 1/2 teaspoonful of instant coffee
  • 5 teaspoons of Rum
  • 3/4 of Cup of raisin 135 grams
  • 1 1/2 cups of cake flours prepared
  • 1/2 teaspoonful of Salt
  • 3/4 of Cup of raw sugar
  • 1/2 Cup of Butter softened
  • 1/2 Cup of milk
  • 2 pieces of egg lightly shakes

    Preparation

    In a small bowl, dissolve the coffee with the rum, add the raisins and let them rest all night.
    Preheat the oven to 170ºC (325 f) cover with paper cups a chorale of 12 molds for cupcakes.
    Sift the flour and salt into a large bowl, add mashed sugar in another large bowl.
    Beat the butter, milk and eggs until well blended, pour the milk mixture into the bowl with the dry ingredients.
    Add three quarters of the rum mixture to the raisins, mix with a spoon. Pass the mixture until filling three quarters of each mold.
    Bake 25 to 30 minutes until golden brown and firm to the touch, allow to cool completely.
    Butter and rum glaze: 1/2 cup of softened butter, 1/2 tablespoon of rum, 1 1/2 cup of icing sugar.
    In a small bowl beat the butter with the rum. Add icing sugar and mix until completely integrated. Spread the mantecado over the mantecadas and decorate with raisins on top.

    TIPS

    Leave the butter out of the refrigerator so that when it is time to beat it is at room temperature.
