Cupcakes with Carrot and Pineapple

I know that the carrot cupcakes already exist but I added a touch of orange and spices that made it different as well as the cream cheese and fruit bitumen inside the cupcakes that I hope you like.

12 portions
  • 3 cups flour
  • 2 cups orange blossom water
  • 1 cup sugar
  • 2 tablespoons baking powder
  • 1 teaspoon baking soda
  • 1/2 pineapples, honey minced and cooked in sugar
  • 1 orange, zest and juice
  • 4 eggs
  • 1 cup oil
  • 1/2 cups butter
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoons clove powder
  • 1/4 teaspoons fresh ginger
  • 1/4 teaspoons nutmeg
  • 1/4 teaspoons salt
  • 200 grams cream cheese, for bitumen
  • 1/2 lemons, the zest
  • 1/2 lemons
  • 150 grams powdered sugar
  • lemon peel, in very thin strips as an ornament
  • 150 grams unsalted butter


Preheat the oven to 200ºC, join all the dry ingredients and sieve them. In a bowl, cream the butter with the sugar with the blender and ready to join the eggs one by one until you get a homogeneous mixture then join the oil in a very slow thread without stopping to beat.
Go adding the flour already united with all the dry and sifted ingredients little by little, and as the mixture becomes heavy, add the orange juice as well as the grated zest, then add the already striped carrot, the ginger, and the pineapple that we have sewn and cooled previously.
To sew the pineapple: wash and split 1/2 pineapple honey peel and cut into small pieces, and leaving it put in a saucepan over medium heat with 1 cup of sugar, and we will give it until it has no juice . This is done 1 day before.
When you have finished step two, in the specials for mantecadas you put your capacetes, fill them to 3/4 parts of the mold and put them in the oven, lowering the temperature to 190ºC for 45 min or until a toothpick comes out clean.
When they are already removed from the oven and allowed to cool in a rack. While you are going to make the bitumen: the butter as the cheese should be at room temperature in a bowl put the two and the creams with a blender and together you put the sugar and the lemon zest then add the lemon juice little by little and ready, you put it in a duya you can refrigerate it for 30min. to make a flower or churrito on the cupcakes decorating them with the strips of the lemon peel and ready.
NOTE: The cupcakes must be very cold, otherwise the bitumen will melt.


You can also decorate them with mint leaves and pieces of the same pineapple that you made. The best thing is to use the imagination. I wish that everything works wonders for you because they are delicious and not because you see many ingredients you are frightened by the wonderfulness of
