These are simple cupcakes, with an unparalleled flavor of coffee, ideal for coffee lovers, like me. Accompanied by a rich coffee of grain, old style, resting in water boiled with cinnamon, very rich and aromatic, I recommend them!

12 portions
  • 100 grams butter
  • 220 grams sugar
  • 2 eggs
  • 210 grams flour
  • 1 1/2 teaspoons baking soda
  • 2 teaspoons instant coffee
  • 125 grams evaporated milk
  • 1 teaspoon vanilla essence
  • 250 grams butter, for mocha cream
  • 450 grams powdered sugar, for mocha cream
  • 1/2 teaspoons strong coffee, for mocha cream
  • 1 teaspoon cocoa powder, for mocha cream

Preheat the oven to 180 ° c. Dissolve the coffee in the milk and reserve.
Add the butter with the sugar. The eggs are lightly beaten and incorporated into the mixture, one at a time.
Add a third of flour with the baking powder (previously sifted) to continue with half of the milk with coffee, so on, add the vanilla, beat at medium speed, to incorporate everything. It should be a smooth and creamy mixture.
Put in a mold for cupcakes or pancakes (I recommend putting two cups to give them a better presentation) Put in the oven for 12 to 15 minutes. Check if they are ready by inserting a toothpick, it should come out clean. Remove from the oven and let cool to decorate.
Put everything in a bowl and mix it at low speed, until the sugar is well incorporated; already incorporated we raise the speed about 3 or 4 min. until sponge cream well. Decorate.

To achieve a better taste and view of your cupcakes you can decorate with coffee beans and bathe them with semi-bitter chocolate. And do not forget to enjoy them with a good coffee!

I suggest you, be aware of your cupcakes, so that when they are ready, take them out of the oven and they remain spoiled and wet. Otherwise they can be resected.
