Preparation
In a skillet over medium heat, heat the milk, whipping cream, 6 tablespoons of sugar, salt and vanilla. Do not let this mixture reach a boiling point.
In a bowl, beat the yolks and two tablespoons of sugar. Once the mixture changes color, add the starch.
Take ½ cup of the mixture you heated in a pan and add it little by little (one spoonful at a time) to the yolk mixture, beat vigorously.
Lower the heat of the pan, and slowly add the yolk mixture to the pan. Cook until the preparation thickens (approximately 30 seconds).
Immediately, strain this preparation. Add a spoonful of butter. Place plastic on the surface of the preparation and refrigerate for two hours.
With a cookie cutter, cut a circle on the top of the cupcakes, looking for a depth of 3 cm. and a diameter of 4 cm (approximately, since it depends on the size of the cupcake).
Pour the custard into the cupcakes. Sprinkle sugar and with the help of a torch, gratin the sugar until it forms a crust.
