Ingredients

8 portions
  • 100 grams butter, room temperature
  • 100 grams sugar
  • 2 tablespoons milk
  • 100 grams passion fruit
  • 145 grams flour, sifted
  • 15 grams grated coconut
  • 2 eggs
  • 1/2 teaspoons baking soda
  • 60 grams butter, room temperature
  • 100 grams powdered sugar
  • 120 grams cream cheese
  • 100 grams passion fruit pulp, for bitumen

Preparation

Preheat the oven to 180 ° C.
Beat the butter with the sugar until they are well incorporated, you should stay a creamy consistency.
Add the eggs one by one, make sure to mix well between each addition. Add the passion fruit pulp and the grated coconut. You can pass through a strainer the passion fruit pulp to remove the seeds.
Add the flour in three batches, until it is fully integrated. If we have too thick the dough add the milk to tablespoons, first one and stir, until you have a creamy dough.
Place cups in a cupcake mold and fill them 3/4 full with the cupcake mix. Bake at 180 ° C for 20 minutes or until a stick comes out clean.
Take the cupcakes out of the oven and being careful not to burn, pass them to a rack to cool completely.
For the bitumen, place the cream cheese in a bowl and whisk until it has a creamy consistency. Add butter, which I recommend is at room temperature to make it easier to integrate. Then, little by little, add the tamaziada glass sugar and finally the passion fruit pulp. Beat until you have a creamy consistency.
Fill a pastry bag with a large curly nozzle with the bitumen. Once the cupcakes are cold, decorate them with the bitumen.

PRESENTATION

Decorate with the passion fruit bitumen, using a pastry bag with a curly duya.

TIPS

Keep butter, egg and cream cheese at room temperature to make them easier to incorporate.
