Preparation
Preheat the oven to 175ºC.
Grease molds for 12 cupcakes with vegetable spray and place on a baking sheet.
In a large bowl, combine the flour, baking powder, baking soda, salt, ginger, cinnamon and cloves.
In another bowl with a whisk, whisk the melted butter, eggs, and brown sugar.
Add a little of the water to the wet mixture and then 1/3 of the flour mixture. Beat well and add the remaining water and flour mixture. Finish by beating well.
Fill 1/3 of each cake pan with the dough and bake for 15 minutes or until a toothpick comes out clean. Remove the cupcakes from the oven and allow them to cool.
Once cold add the lemon bitumen on top, place a cherry and two mint leaves in each cupcake to decorate.
