Ingredients

10 portions
  • 120 grams wheat flour, weak for pastry
  • 120 grams butter
  • 120 grams sugar
  • 2 eggs
  • 4 grams yeast, instant powder for desserts
  • 1 pinch salt
  • 2 lemon zest
  • 300 grams cream cheese, Philadelphia or similar (for frosting)
  • 50 grams butter, (for the frosting)
  • 50 milliliters cream, beaten to the point of snow (for frosting)
  • 140 grams powdered sugar, (for the frosting)
  • 50 grams fruit, of the forest (for frosting)
  • fruits, of the forest (to decorate)

Preparation

For the mass of the cupcakes: Mix the flour with the yeast. Beat the butter with the sugar, then add the eggs and the lemon zest. Gradually add the flour with the yeast and finally the pinch of salt. Grease and flour the molds for cupcakes and pour the dough up to 2/3 of the molds. Bake in a hot oven at 175 ° C for 20 minutes. Let cool.
For frosting: cook in a saucepan over the fire the berries of the forest with half the sugar and little water until they are tender. Then beat the whole and let cool. Mount the cream to the snow point. Rotate the butter with the other half of the sugar and add the cheese and the berries of the forest little by little. Gently add the cream and let it rest in the refrigerator for half an hour.
To decorate: put the frosting in a pastry bag and start covering the layer of each cupcake. Decorate with fresh berries of the forest. Bon Appetite!!!
