This is a recipe for vegan lemon cupcakes that are delicious. It is the best option to cook a rich dessert without using ingredients of animal origin and to result in a delicious flavor.

Ingredients

12 portions
  • 380 grams wheat flour
  • 1 teaspoon vanilla extract
  • 2 lemons, just the zest
  • 200 grams olive oil, soft
  • 270 milliliters Water, or vegetable milk (oats or soy)
  • 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon yeast, chemistry
  • 280 grams brown sugar

Preparation

We heat the oven to 180ºC.
In a bowl, sieve the flour with the yeast, salt and baking soda. Add sugar, water (or vegetable milk), vanilla, lemon zest and oil. Stir well with a blender until there is a homogeneous mass without lumps.
We can now prepare the molds and bake it at 180ºC for approximately 12-15 minutes. And the cupcakes are ready!
