Ingredients

8 portions
  • 100 grams butter
  • 100 grams granulated sugar
  • 1/2 teaspoons vanilla extract
  • 2 eggs, at room temperature
  • 3/4 teaspoons cinnamon powder
  • 150 grams bitter chocolate
  • 50 milliliters Red wine
  • 100 grams flour
  • 1 teaspoon baking soda, (royal)
  • 100 milliliters whipping cream

Preparation

Chop 50 grams of chocolate and reserve.
Heat the oven to 175 ° C and prepare the molds with the caps.
Soften the butter and add the sugar and vanilla. Beat until fluff.
Add the eggs. One by one and beat until perfectly integrated.
Add the red wine slowly until incorporated.
By hand and with the help of a spatula add chopped chocolate and cinnamon.
Mix the flour with the baking powder. Then incorporate the mixture in three parts. Do it in an enveloping way.
Fill the molds up to 2/3 parts, always trying to remove the air by small taps. Bake for 45 min or until the center cupcake comes out a stick without mass
Heat the cream to beat until boiling but not boiling. Remove from heat and add chocolate. Mix until incorporated. Allow to cool completely before decorating.

TIPS

If the wine is a little dry, the chocolate can be changed to milk chocolate.
