A delicious combination of tropical flavors, but very suitable for any celebration. These vanilla cupcakes with coconut mousse top are very original and delicious.

Ingredients

12 portions
  • 170 grams flour
  • 1 1/2 teaspoons baking soda
  • 1/4 teaspoons salt
  • 115 grams butter, at room temperature
  • 225 grams granulated sugar
  • 2 eggs, large at room temperature
  • 1/2 teaspoons vanilla extract
  • 1/2 cups milk
  • 400 milliliters coconut cream
  • 385 milliliters evaporated milk
  • 300 milliliters condensed milk
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons unflavored gelatin
  • 1/2 cups Water, hot
  • grated coconuts, to decorate
  • cherries in syrup, to decorate
  • chocolate syrups, to decorate

Preparation

Preheat the oven to 200 ° Celsius.
Put a little layer in the cupcake molds (the little thing that is made of paper :-) and sprinkle them with butter or cooking spray.
Sift the flour, the baking powder and the salt, with the blender at low-medium speed, add the butter in small pieces and whisk until integrating. Add the sugar per tablespoon. Keep beating until everything is integrated.
Add the eggs one by one gently, alternating with vanilla and milk, beat until everything is united and integrated.
Put the mixture in the molds for cupcakes and bake 40 minutes. Do not forget that you MUST NOT OPEN THE OVEN UNTIL THE PAST 35 MINUTES, otherwise our rich cupcakes will be lowered :-) You have to check that they are already cooked, inserting a toothpick or a thin knife, if you still need it, leave them for 5 minutes more and check again with the same method. Let cool.
While the cupcakes are baking, we will make the coconut mousse.
Put the coconut cream, the condensed milk, the evaporated milk and the vanilla in the blender , beat gently until integrating.
Dissolve the gelatin in the half cup of warm water and little by little add to the mixture.
Put this mixture in a container that is not high and leave in the refrigerator for two hours.
Once the mousse and the cold cupcakes are done, place on top of each cupcake an abundant amount of mousse, put grated coconut, a cherry and around this chocolate syrup.
AND READY! They have some delicious cupcakes with which they will be the success of any meeting or just to spoil their family or friends :-)

PRESENTATION

Making the decoration as I mentioned in the instructions, I assure you it will be a success, although if you put more chocolate in the middle of the cupcake or on the sides, it will also be great ... yomiii, they already craved it again.

TIPS

Do not forget that it is important not to open the oven before 35 minutes.
