Ingredients

12 servings
  • 1 Cup of sugar
  • 3 spoonfuls of Butter
  • 1/2 Cup of raisin
  • 1/2 Cup of cranberry dehydrated
  • 1/2 Cup of dried fruit mixed, cut into cubes
  • 1/2 Cup of cherries in syrup
  • 2 spoonfuls of Orange zest
  • 1 teaspoonful of clove ground
  • 1 teaspoonful of nutmeg
  • 1 teaspoonful of Ground ginger
  • 1 teaspoonful of ground cinnamon
  • 1/4 of Cup of Rum
  • 1/4 of Cup of nut finely chopped
  • 2 cups of milk
  • 6 pieces of egg
  • 1/4 of Cup of sugar
  • 1/4 of Cup of Butter melted
  • 1 tablespoon of vanilla essence
  • 6 cups of bread hard, cut into cubes

    Preparation

    Preheat the oven to 180 ° C (356F)
    Heat a pan over medium heat, and cook the sugar until it forms a caramel, add a little butter and mix until incorporated. Pour into a 25 cm diameter screw mold. Reserve.
    In a bowl mix the raisins, cranberry, mixed fruit, cherries, orange zest, cloves, ginger, cinnamon, rum and macerate for 30 minutes.
    In a bowl, beat the milk with the egg, sugar, butter and vanilla essence. Soak the bread with this mixture and add the fruits that you macerated.
    Place macerated cherries on the hardened caramel, a little fruit, nutmeg and pour the bread mixture, cover with aluminum foil and bake in a bain-marie for 55 minutes. Remove from the oven cool and unmolds.

    PRESENTATION

    Serve the pudding with caramel and enjoy. Try the dried fruits up to the top so they can be seen on the cake.

    TIPS

    Take care that the bread is soaked well so that the pudding is perfect. The more hydrated the bread is the softer bread will be in the preparation. You will know that it is ready when your preparation feels firm as bread.
