Beat the yolks to a cord point.
The whites to nougat point.
The cream until it is very hard.
All this in separate frets. Mix everything, add sugar and lemon juice.
Once the sugar has been well incorporated, it is emptied into a dish smeared with butter and sprinkled with the powder of the crushed soletas.
It goes into the freezer until it sets.
Then it goes down to the refrigerator and there you have it to keep it curdled.
