This new version of the classic baked apples is between the sweet and the salty. The strong blue cheese is the main ingredient in this recipe; aromatic spices and sweet honey play secondary roles.

Preparation
Cut a cone 5 cm thick on the side of the stem. Remove the hearts without reaching down. Chop around the lower third to prevent it from opening during pressure cooking.
Place the apples in an Express® Pressure Cooker. Sprinkle with 1/4 cup of honey and 1/2 lemon juice. Bathe with apple juice and rum. Add the clove, anise star and cinnamon sticks.
Close the Pressure Cooker Express® and apply the pressure regulator, place it in the stove with a high flame for about 25 minutes or until constant steam comes out, lower the flame to medium and cook 5 minutes, depending on the size of the apples.
Remove the Express® Pressure Cooker from the heat, let cool, remove the pressure regulator, open the Express® Pressure Cooker, and that's it!
Apples should feel soft when chopped with a fork. Crumble the cheese and measure 1/2 cup; Reserve the remaining cheese for garnish.
In a small bowl, mash the blue cheese, a spoonful of honey, the pepper and the cream. Fill the apples with this mixture.
Garnish the apples with the blue cheese you reserved and a little pepper. Sprinkle with a little of the juices and serve.
