Preparation
Melt the chocolate in a water bath. With the help of a brush, it covers 4 silicone molds. Let cool and unmold. Leave them in a cool place.
Beat the cheese, sugar and lemon juice until the consistency is creamy.
Beat the cream until it has hard peaks and add to the cheese mixture carefully so that it does not come off.
Cut the raspberries in 4 reserving one for the decoration of each basket.
Mix half the cheese with the raspberries.
In each basket put a layer of the cheese mixture with the raspberries and on top of another of pure cheese.
Decorate each basket with a raspberry and a mint leaf.
