Ingredients

12 portions
  • 300 grams self-raising flour
  • 150 grams powdered sugar
  • 110 grams lard
  • 5 eggs
  • 2 tablespoons vanilla essence
  • 350 grams coconut
  • 250 grams sugar
  • 700 grams dulce de leche (caramel)

Preparation

Mix butter (at room temperature) with sugar and vanilla essence.
Add two eggs, one by one.
To integrate the sifted flour, mixing with a spatula.
Bring the dough to the refrigerator and let it cool for 30 minutes.
When it is removed, without touching it with your hands, stretch and cover (only) the already lined bottom (with lard and flour) of a 26 cm.
Add the dulce de leche on the dough.
On the other hand, mix (with spatula or by hand) the sugar with the coconut and add the remaining 3 eggs until all the mixture is moist.
Place on the dulce de leche without making too much pressure so as not to compact it inside the dulce de leche.
Bring to a moderate oven for 20 minutes (or until the upper part is golden brown).

TIPS

Use a large, deep dish to mix the coconut and sugar or it can overflow.
