A Colombian recipe inherited from my older sister, which I now have the pleasure of sharing with my new Mexican family. Do not be afraid to try this bittersweet recipe ... well, although cabbage is generally used in salted salads, when cooked with cinnamon, sugar and raisins, it adopts its flavors and when mixed with the rest of the ingredients they fuse marvelously!

Ingredients

10 portions
  • 800 grams cabbage
  • 500 grams pineapple, chopped
  • 2 apples
  • 1 cup Oaxaca cheese
  • 2 cinnamon
  • 1 cup raisin
  • 250 milliliters cream
  • condensed milk, to taste
  • 1/2 cups sugar

Preparation

Wash and slice the cabbage very thin. You boil 2 liters of water with the cabbage, cinnamon, 1/4 cup of sugar. About 40 minutes, when the cabbage is very well cooked you add the raisins and let them boil about 15 minutes more. Immediately put it in a drainer until it is without any water.
At the same time, cook the pineapple in 1 liter of water with sugar and cinnamon for 30 minutes. Then you drain it completely.
Peel and chop apples in boxes.
When the cabbage and pineapple are completely drained, put them in a bowl to mix them. You add the apple, the grated cheese and mix well.
Finally add the milk cream and milk to your liking. You serve at room temperature or on hot, cold days.

PRESENTATION

If you love cheese like me, you can decorate with a little more grated cheese or grated coconut.
