Crumble Apple and Red Fruits with Cheese Ice Cream

For those days when you need to pamper yourself, prepare this apple crumble with red fruits and granola that is ideal for an afternoon with friends. It is very simple and rich and is accompanied with a delicious cheese ice cream.

  • 1 1/2 cups flour, (for the base)
  • 1/2 cups sugar, (for the base)
  • 1 teaspoon liquid vanilla, (for the base)
  • 1/2 teaspoons salt, (for the base)
  • 3/4 sticks butter, 75 g (for the base)
  • 1 egg, (for the base)
  • 2 tablespoons butter
  • 5 apples, in cubes
  • 1/2 cups raspberry, cut in halves
  • 3/4 cups raw sugar
  • 1 teaspoon cinnamon
  • 1 stick butter, cold (90 g) for the crumble
  • 3/4 cups flour, for the crumble
  • 1/2 cups sugar, for the crumble
  • 1/2 cups Granola with quinoa Kellogg's®, for the crumble
  • 1 cup whipping cream, for ice cream
  • 2 packages cream cheese, (190 gc / u) for ice cream
  • 1/2 cups sugar, for ice cream
  • 1/4 cups milk, for ice cream


Preheat the oven to 180 ° C.
In a processor, process the ingredients of the base until a homogeneous mass is obtained. Refrigerate 15 minutes.
Extend with a roller and line a 20 cm pie mold previously greased and floured. Chop with a fork and bake 20 minutes.
For the filling, in a pan over medium heat melt the butter and add the apples and red fruits, cook 3 minutes. Add the sugar and cook on low heat for 5 minutes or until the apples are soft. Remove from heat and add cinnamon. Reservation.
For the crumble, mix all the ingredients in a bowl without working hard, it should be a sandy mixture. Refrigerate 10 minutes.
Pour the mixture of apples and red fruits over the previously baked dough, trying not to put liquid to prevent it from soaking. Cover with the crumble and bake 20 more minutes until golden brown.
For the ice cream, beat the cream to beat until soft peaks form. Reservation.
In the blender , add the cheese with the sugar until incorporated. Add the milk little by little and mix very well. Mix in an enveloping form with the cream to beat and freeze 2 hours.
Serve the hot crumble with cheese ice cream.


Serve with cheese ice cream and decorate with icing sugar.


Watch the amount of sugar in the ice cream to freeze and have the consistency of ice cream.
