The gazpachos of Morelia are based on a simple principle: fruit and cheese always make a good pair. If you do not get Cotija cheese, which is the traditional Michoacán cheese, you can use any firm and salty cheese (Feta, for example) to prepare this simple recipe.

Ingredients

Preparation
