Ingredients

6 portions
  • 2/3 cups sugar
  • 1 tablespoon fresh ginger, chopped
  • 3 cups berry
  • 3 tablespoons lemon juice
  • 1 pinch salt
  • mint leaves, to decorate

Preparation

In a saucepan mix the sugar, ginger and 2 1/2 cups of water.
Cook over medium heat until the sugar is 100% dissolved, 5-7 minutes. Remove from heat and strain.
Mix in a blender the sugar syrup, the blackberries, the lemon juice and the pinch of salt.
Place in a metallic rectangular refractory and freeze for 4 hours, every half hour remove from the freezer, scrape with a spoon and return to the freezer to achieve the granite.
