Pears with red wine are a classic when it comes to choosing a good dessert to top off the Christmas dinner. I like it and I love it, I love it, it's delicious and it looks fabulous.

Preparation
Place the wine, the vanilla pod, a cinnamon stick, the clove and the sugar in a stainless steel saucepan. Simmer for a few minutes. Peel the pears without removing the logs. Place in the wine so that they are stopped. Cook for 20 minutes or until tender but not tender. Check the cooking point by inserting a toothpick.
Allow to cool in the wine, remove and arrange in a dish or dessert plates. Reduce the cooking liquid to the consistency of thick syrup. Allow to cool and pour over the pears. Serve warm pears or at room temperature.
