Preparation
Peel the quinces in a copper pan and simmer for 15 minutes or until they begin to soften.
Add the sugar and crush, pour the water and let it boil slowly while stirring until it thickens.
It will be ready when it has a viscous consistency and when looking at the bottom of the saucepan.
Pour into a mold or many molds and allow to cool for 24 hours.
Unmold and sprinkle pistachio on top.
