Preparation
Preheat the oven to 100 degrees Celsius.
Prepare two baking trays with waxed paper and vegetable oil spray.
With an electric mixer begin to beat the egg whites until they begin to have bubbles.
Add the cream of tartar and little by little 1 cup of sugar. Continue beating until you get a white and hard meringue.
With a pastry bag do the Vacherin with circular movements on the waxed paper.
Bake until they can be easily removed from the wax paper, approx. 1 hour and a half.
Beat the cream with 1/2 cup of sugar and place in the center of each Vacherin.
Cover with assorted berries.
