Preparation
Dissolve the sugar in warm milk, add the yeast and allow it to act for 15 minutes.
Mix flour, yeast and other ingredients except ricotta cheese and sugar. Knead until the consistency of a soft dough.
Place the dough in a greased bowl, cover and allow it to grow in a warm place for 1 hour.
Place the dough on a surface with flour and with a roller flatten until it has a thickness of half a centimeter.
With a cookie cutter cut circles of 6 centimeters.
Spoon a piece of ricotta cheese over half of the circles, put a little of the egg mixture around the circle and cover with another circle. With fingers seals the sides.
Cover the donuts with a cloth and allow them to grow for another half hour.
Fry the donuts in hot vegetable oil until golden brown (3 minutes on each side). Remove from the oil and place on absorbent paper towels.
Garnish with icing sugar just before serving.
