In a bowl, pour ¼ of warm milk and add the yeast little by little. Stir a little and let stand 5 minutes.
In another larger bowl add ½ of warm milk, cup of sugar and butter, add the mixture with the yeast and stir. Add the egg, flour, mint extract and salt and beat until it takes consistency. If the dough is sticky, flour is slowly added until it is no longer sticky.
On a clean surface sprinkle flour so that the dough does not stick and start kneading with your hands for 5 minutes. Put the dough together and cover with a cloth and let stand 45 minutes.
After this time knead and form the donuts with small balls and crush them. With a glass or lid of some container cut the center and let them rest another 15 minutes.
Preheat the oven to 180 ° C and then bake the donuts for 7 to 8 minutes, taking care not to brown them too much.
Once the time has elapsed, let them cool at least 5 minutes before putting the icing on top (hot, the glaze melts, that's why they should be cold)
For the glaze: In a bowl add 3 tablespoons of marmalade, add with the sugar flower and the coloring, at the end add the hot water, mezcal. The glaze should be like a thick sauce, you can add more sugar flower until it takes consistency.
