Preparation
Preheat the oven to 180 ° C.
Mix flour, baking powder, spices, salt and pepper in a bowl.
In another bowl with an electric mixer , beat butter and shortening for 1 minute. Add the brown sugar and beat for 2 more minutes. Add the egg to continue beating.
Add the mixture of dry ingredients until a hard dough is obtained. Finish mixing it with your hands and make two balls. Cover the balls with plastic wrap and refrigerate for 2 hours.
Remove one of the balls from the refrigerator and leave at room temperature for 10 minutes. Place it on a clean surface with flour and flatten with a roller until it is 1/2 cm thick. With a Santa-shaped cookie cutter cut the cookies and put on baking trays greased with spray oil. Repeat with the other ball of dough.
In a bowl beat the egg yolks and add a drop of dye or enough to reach the desired color.
In each cookie put a layer of the mixture of yolks and dye.
Bake the cookies for 10-12 minutes or until lightly browned. Remove from the oven and still warm add to the cookies one more layer of glaze. Let cool.
Put the vanilla bitumen in a duya with a fine tip and decorate the cookies making Santa's hat, beard, eyes and mouth.
