Preparation
Put the butter in a bowl at room temperature and sugar. Shake. Add the yolks, the vanilla essence and the lemon zest; continue beating until creamy.
Sift the flour, cornstarch and salt in another container and add it to the previous mixture. Mix with enveloping movements until well integrated and form a dough. Take the dough and wrap it in plastic wrap. Take to the refrigerator for one hour.
Cut the cookies with a round cookie cutter 5 cm in diameter. With a smaller round cutter cut and remove the middle half of the cookies. Pre-heat the oven to 180 ° C for 15 min. Place the cookies in a baking tray with waxed paper (butter paper) and bake at the same temperature until they are barely golden (10-12 minutes approx.) Remove and let cool.
Place a spoonful of marmalade in the center of each cookie and spread the circles, being careful not to spread the marmalade towards the edges. They are 32 units approx. Ready for Tea.
