Easy Mexican Fritters with Dulce de Leche

Buñuelos are a typical and seasonal Mexican dessert, which has a homemade honey made with piloncillo. With this recipe for easy fritters, you can prepare a tower filled with cream cheese and dulce de leche and your own piloncillo honey from scratch. So that the flour tortillas do not burn, it is important that the oil is not too hot and if you want the honey to have a thicker consistency, add only half the water.

Ingredients

2 portions
  • vegetable oil, to fry
  • 10 flour tortillas
  • 1 piloncillo, for honey
  • 1/4 cups water, for honey
  • 1 raja cinnamon, for honey
  • 2 star anise, for honey
  • 3 guavas, slices for honey
  • 1 cup cream cheese, for the filling
  • 1 cup dulce de leche, for the filling
  • whipped cream, to decorate
  • guava, cut into halves for garnish
  • cinnamon, to decorate

Preparation

In a skillet over low heat, fry the flour tortillas until they are crisp. Place on absorbent paper to remove excess fat and reserve.
For the honey: heat the piloncillo, water, cinnamon, star anise and guavas in a pot over medium heat. Cook until a honey is formed. Let cool and reserve.
For the filling: beat the cream cheese until smooth, add the dulce de leche and mix until they are integrated.
On a board, assemble the donut tower, adding the filling in each layer and cover with whipped cream. Garnish with guavas and cinnamon, and serve with honey for fritters.

PRESENTATION

On a plate of talavera, accompanied by café de olla.

TIPS

It is important that the oil is not too hot, otherwise the flour tortillas will burn. The consistency of the honey will depend on the amount of water you add to the recipe, if you want a thicker honey, add half the water.

En Venezuela, los buñuelos se hacen con yuca sancochada y molida, se fríen las pelotitas, y luego se bañan de miel o azúcar. De todas formas esta nueva receta se ve bien
