This sweet potato recipe is ideal for the cold season, as it is sweetened with condensed milk and a perfect combination of spices and softness. Enjoy this recipe for Day of the Dead offerings or as an accompaniment to your afternoon coffee.

Ingredients

12 portions
  • 4 sweet potatoes, large, skinless and cut into medium cubes
  • enough Water, to cook the sweet potato
  • 1/3 cups Orange peel, to cook the sweet potato
  • 1/3 cups lemon peel, to cook the sweet potato
  • 1 raja cinnamon, to cook the sweet potato
  • 1/4 cups butter, in cubes
  • 1/4 cups orange juice, without seeds
  • 1 cup evaporated milk
  • 1 1/2 cups condensed milk
  • 1/2 cups milk
  • 1 tablespoon cinnamon powder
  • 1 teaspoon nutmeg powder
  • 2 whole cloves, integers
  • enough whipped cream, to decorate
  • enough pecan, chopped, for garnish
  • enough lemon, triangles, to decorate

Preparation

In a deep saucepan place the sweet potato in cubes, pour enough water to cover, add the orange peel, lemon peel, cinnamon and cook over high heat until the water boils. Cover and cook for 20 minutes over medium heat, until you notice that the sweet potato is soft enough, then it will be time to remove from the heat and drain.
Place the sweet potato in a bowl and mash it with the help of a potato masher until you get a puree. Reservation.
In a hot deep frying pan, melt the butter, add the sweet potato puree, orange juice, evaporated milk, condensed milk, whole milk, cinnamon, nutmeg and cloves; Integrate and cook over medium low heat for 25 minutes, remember to stir constantly so that the bottom does not stick. Remove from the fire and let cool.
Once cold, serve in glasses, accompany with whipped cream, chopped walnuts and garnish with lemon.

PRESENTATION

Accompany with whipped cream and pecan nuts.

TIPS

You can use coconut milk to give it a tropical flavor. If you want, you can grind the puree in a processor to have a smoother consistency.
