Preparation
Stir the ground pistachios with the evaporated milk, add the cream cheese and the eggs (one by one). Beat until it reaches a creamy consistency.
Add the sugar, vanilla and brandy to the previous mixture.
Place candy at the bottom of the molds (or the mold, as the case may be), looking for it to be evenly spread at the base.
Place the molds in a preheated bain-marie until the flan sets, if it is a large mold it takes around 40 minutes, if they are individual molds, they set in about 20 minutes. One way to check if it is set is by pressing the flan with a knife, if the knife comes out clean it means that the dessert is already set.
Remove the molds (or mold) from the water bath and let them cool to room temperature. Put them in the refrigerator, preferably overnight.
Place on a dessert plate a tablespoon of melted vanilla ice cream and top the mold. Sprinkle some pistachios to give a better presentation.
