We turned the classic pineapple pie into a creamy and rich flan! Cook this quick and easy vanilla custard, with a base of pineapples in syrup and caramel, decorated with cherries in syrup. This dessert will make you look like a professional.

Ingredients

10 portions
  • 1 cup sugar
  • 4 tablespoons Water
  • 1 cup Pineapple in syrup, drained
  • 1 cup milk, (240 ml)
  • 2 teaspoons liquid vanilla
  • 1 cup evaporated milk
  • 2 cups cream cheese, at room temperature
  • 2 cups condensed milk
  • 8 eggs
  • to taste cherries in syrup, to decorate

Preparation

Preheat the oven to 150 °C. (302°F)
Cook the ingredients of the caramel in a pot over low heat until it forms a thick caramel and forms small bubbles, taking care not to move so as not to crystallize the sugar.Pour hot into a mold for flan of 20 to 25 cm (8 to 10 inches) in diameter, place the pineapples carefully and let dry.
For the flan, in a pot cook the milk with vanilla and evaporated milk, add the cream cheese and cook until dissolved. Beat the eggs with the condensed milk in a bowl and add to the pot, cook 5 minutes or until thickened, stirring constantly.
Pour the preparation into the mold with the caramel carefully, cover with aluminum foil and bake in a bain-marie for about 1 hour and a half. Cools lightly and remove from mold.
Decorate the custard with cherries in syrup and refrigerate at least 2 hours before serving.

PRESENTATION

Decorate with cherries in syrup.

TIPS

After adding the candy to the mold, grease with butter and cover with sugar.
