Preparation
Prepare a 15-20 cm square refractory with waxed paper.
In a medium-sized pot, cook the blackberries over medium heat until their juices start to flow (about 5 minutes).
Pass the berries through a strainer and push the berries so that they pass their liquids and part of the fruit. You should get 2/3 cup of blackberry puree (if you get more keep it for later).
Add the lemon and gelatin to the berries, mix well and allow the gelatin to be absorbed for 4-5 minutes.
In a large pot combine the water and sugar and cook over medium heat until the sugar has dissolved.
Remove the pot from the heat and add the gelatin of blackberries and mix until it has dissolved at 100%. Return the pot to the heat and cook constantly stirring until it is about to boil.
Pour the gelatin into the refractory and allow at least 12 hours at room temperature before cutting the squares.
Use a sharp knife to cut the squares (they should leave about 60) and pass them through the extra fine sugar.
