Preheat the oven to 350ºF (180 ° C).
Cover 2 or 3 baking trays with wax paper or baking paper. Put the butter in a bowl and beat until softened. Mix it with the sugar, vanilla and salt until it absorbs the sugar. Add little by little 2/3 of the flour, continuing to mix.
Add the rest of the flour and the almonds and mix until it forms a dough. Pass the dough to the pastry bag and form vertical pieces of 7.5 cm long on the trays or give any shape to your cookie (heart, circle, etc).
Bake for 12 min or until browned and move to a rack. Melt the chocolate in a bowl in a bain-marie. Dip the cookie halfway and put them on the rack to dry.
