This rich ginger cake is very easy to prepare and is delicious thanks to the touch of crystallized ginger inside.

Ingredients

8 portions
  • 1 egg
  • 1/2 cups sugar
  • 1/2 cups vegetal oil
  • 1/2 cups granulated piloncillo
  • 1/2 cups crystallized ginger, chopped
  • 1/2 cups Water
  • 1 1/3 cups flour
  • 1 tablespoon baking soda
  • 1 tablespoon ground ginger
  • 1/4 tablespoons cinnamon powder
  • 1/4 tablespoons ground clove
  • 1/8 teaspoons ground black pepper
  • 1 cup walnut
  • 8 cherries liquor

Preparation

In an electric mixer beat the sugar, egg, oil, brown sugar and ginger.
Add the water and continue beating.
In a deep bowl, mix flour, baking powder and spices.
With a spatula, pour the flour into the egg mixture and mix well.
Pour the mixture into a baking dish in a circular or pan shape and bake at 150 degrees Celsius for 20-25 minutes or until a toothpick comes out clean. Remove from the oven.
Allow the cake to cool 10-15 minutes and unmold.

PRESENTATION

Decorate the cake with cherries and walnut and serve with whipped cream.

TIPS

If you do not have crystallized ginger you can make it with fresh ginger sprinkled with sugar and baked for 45 minutes at 150 degrees Celsius.
