This lemon poundcake has a sweet lemon glaze and is very easy to prepare.

Ingredients

12 servings
  • 2 sticks of unsalted butter at room temperature
  • 3 cups of flour
  • 3/4 of Cup of milk with a few drops of lemon
  • lemon zest from 2 lemons
  • 1 Cup of lemon juice
  • 1 1/2 teaspoons of Salt
  • 1/2 teaspoonful of baking powder
  • 1/2 teaspoonful of baking soda
  • 2 cups of sugar
  • 5 eggs
  • 2 cups of powder sugar
  • 3 o 4 spoonfuls of lemon juice for the glaze

    Preparation

    Preheat the oven to 180 degrees C (356F) with the rack in the bottom of the oven.
    Grease and flour 2 elongated pound cake molds.
    Add a few drops of lemon to the milk and mix with the rest of the lemon juice, and grated peel.
    In a bowl, mix the flour, salt, baking powder and baking soda.
    With an electric mixer, beat the butter at medium speed.
    Add sugar to butter and beat until fluffy.
    Add the eggs one at a time, beating until everything is incorporated.
    Reduce the speed to low and add the flour mixture in three parts, alternating with the milk (starting and ending with the flour).
    Beat quickly until everything is incorporated (do not over beat).
    Divide the mixture between the two greased and floured molds.
    Bake for 50-60 minutes or until you insert a toothpick into the center and it comes out dry.
    Let cool for 15 minutes in the mold.
    Unmold and let cool completely.
    Prepare the glaze: put the icing sugar in a bowl and add 3 tablespoons of lemon juice, stir well with a balloon whisk. Add more lemon juice if necessary.
    Put the pancakes on the rack and add the glaze on top.
    Let the glaze harden for 30 minutes.
