Ingredients

12 servings
  • 2 cups of San Juan® egg whites 180 grams
  • 1 1/2 cups of sugar
  • 1 tablespoon of lemon juice
  • 1 tablespoon of lemon zest
  • 1 tablespoon of Orange zest
  • 1 3/4 cups of rice flours 300 grams
  • 1 Cup of Butter
  • 1 Cup of Butter melted
  • 1/4 of Cup of nut toast
  • 1/4 of Cup of pistachio toasted
  • 1/4 of Cup of almond toast
  • 14 cups of cranberry
  • 1 Cup of Greek yoghurt 0%, for glazing
  • 1 tablespoon of bee honey for the glaze
  • enough of Strawberry to decorate
  • enough of blueberry to decorate

    Preparation

    Preheat the oven to 170 ° C.
    Beat the San Juan® egg whites until they rise slightly, add the sugar, the lemon juice little by little, beat until it doubles its volume and are stable.
    Add wrapping and rice flour, alternated with butter. Once incorporated, add the nuts, pistachios, almonds and blueberries.
    Pour into a mold of previously greased and floured thread with rice flour. Bake for 25 minutes, let cool and unmold.
    For the glaze, mix the yoghurt with the honey and refrigerate until use.
    Decorate the thread with the glaze, strawberries and blueberries.

    PRESENTATION

    In a platter, decorated with yogurt and fruits.

    TIPS

    The lemon juice gives greater stability to the whites. When adding the butter, you should be careful not to add hot otherwise the egg whites could be lowered. The egg whites of San Juan® are 100% natural and free of preservatives.
